These Vanilla Glazed Ricotta Cheese Cookies are cake-like and softโnot too sweet either. The vanilla glaze, I think, is just enough. The cookies without the glaze are just as delicious. Itโs like eating little bites of cake without frosting. I usually dab about a half-teaspoon of glaze on top of each cookie, followed by a pinch of candy sprinkles in colors that complement the holiday.

Vanilla Glazed Ricotta Cheese Cookies Recipe

- 1 cup ricotta cheese
- 1 tsp vanilla extract
- 1 cup granulated sugar
- 1 large egg
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp salt
Vanilla Glaze
- 3/4 cup powdered sugar
- 1 tbsp milk
- 1 tsp vanilla extract
- candy sprinkles
Instructions
- Preheat your oven to 350ยฐF and line a cookie sheet with parchment paper.
- In a bowl, cream together butter and sugar. Add ricotta, eggs, and vanilla; mix well.
- Gradually mix in flour, baking soda, and salt until a dough forms. Using a small cookie scoop, drop dough onto the sheet, leaving 2 inches between cookies.
- Bake for about 10 minutes until slightly golden brown and cake-like.
- For the glaze, mix powdered sugar, milk, and vanilla until smooth; adjust milk as needed.
- Drizzle glaze over each cookie and top with candy sprinkles. Enjoy!
