Baking is one of my favorite past times, especially cookies and cakes. Today I couldn’t decide between a decorated gingerbread man or cookies, but I finally settled on making my Vanilla Glazed Ricotta Cheese Cookies recipe dressed with a few Christmas candy sprinkles. The poor gingerbread man will have to wait a few more days when the kids have free time to help decorate.

Ricotta cheese cookies are an Italian favorite and they are most popular at Easter and Christmas. They can be served with or without glaze. These Vanilla Glazed Ricotta Cheese Cookies are cake-like and soft—not too sweet either. The vanilla glaze, I think, is just enough. The cookies without the glaze are just as delicious. It’s like eating little bites of cake without frosting. I usually dab about a half teaspoon of glaze on top of each cookie followed by a pinch of candy sprinkles, colors that compliment the holiday.
While I jot down my list of must-bakes and must-make crafts for this Christmas Season, I will for sure nibble on a couple of Vanilla Glazed Ricotta Cheese Cookies with a glass of ice-cold milk—and skim milk at that! I know, I know. It’s like eating a cheeseburger and fries and then ordering a diet Coke. It’s a good thing Christmas only comes once a year.
Vanilla Glazed Ricotta Cheese Cookies Recipe
Ingredients
Cookies
- 1/2 cup unsalted butter at room temperature
- 1 cup ricotta cheese
- 1 tsp vanilla extract
- 1 cup granulated sugar
- 1 large egg
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp salt
Vanilla Glaze
- 3/4 cup powdered sugar
- 1 tbsp milk
- 1 tsp vanilla extract
- candy sprinkles
Instructions
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
- In a medium bowl, cream together butter and sugar. Add ricotta, eggs, and 1 teaspoon vanilla; mix well.
- Add flour, baking soda, and salt; mix until dough forms. Using a small cookie scoop (about 2 teaspoons), place dough about 2-inches apart on cookie sheet. Bake for approximately 10 minutes, or until cookies are slightly brown. Cookies will be cake like.
- To make the glaze, mix powdered sugar, milk, and one teaspoon of vanilla together. Add additional milk if the glaze is too thick. Drizzle about ½ teaspoon of glaze on top of each cookie. Top with candy sprinkles.
